Corn and Two Bean Salad
6 - 8 ears of corn, uncooked.
1/2 cup of halved cherry tomatoes.
1 cup of black beans; canned and rinsed. (If you use cooked dry bean - do not over cook; let cool completely and rinse in cold water before adding to corn.)
1/2 cup of red kidney or other type of bean.
4 chopped scallions
4 Tbsp. extra-virgin olive oil
1 red or orange bell pepper, diced
2 Tbsp. chopped cilantro
3 Tbsp. red wine vinegar
pinch of salt and ground pepper (optional)
Shuck corn and slice off the kernals. Heat 2 Tablespoons of olive oil in a wok or large frying pan. Add kernals and saute for 2-4 minutes. Transfer the corn from the pan into a large bowl. Allow the corn to cool for 5 minutes. Add beans, tomatoes, red pepper, scallions, and cilantro. In a separate, smaller bowl, mix the vinegar, salt, pepper, and 2 Tbsp. of oil. Pour over salad and mix. This is great cold!!!
Spinach Strawberry Salad
1 Cup of fresh baby spinach; washed
4 - 6 strawberries
3 - 4 rings of thinly sliced red onion
Raspberry Walnut Vinaigrette
Feta and raisins optional
